Italian Style Mushroom Soup

  • 150 gm White mushrooms
  • 3 tsp Olive oil or veg oil
  • 1 no Tomato
  • Salt As reqd
  • 3 tbsp Maida
  • 2 1/2 cups Milk
  • Black pepper As reqd


  • Chop the mushrooms and tomato.
  • :- The stem of mushroom can also be used in the soup.
  • Heat olive oil in a pan.
  • Saute the mushrooms till all the water in the mushroom evaporates.
  • :- This takes only 1 or 2 minutes and you get the mushrooms with a concentrated earthy flavour which is excellent in soup.
  • Sprinkle salt to the sauted mushrooms and keep aside.
  • In a vessel, dry roast the maida till it turns slight brown.
  • Add boiled milk slowly and stir well so that lumps are not formed.
  • Stir till the mixture thickens to the desired consistency.
  • Add the sauteed mushrooms and pepper.
  • Add more salt if required.
  • :- Serve hot.
