- For Marite -
- Brinjal 250g -
- Red chili powder : 1 tsp -
- Salt : 1 tsp -
- Turmeric powder 1/2 tsp -
- corn flour 1 tbsp -
- maida 1/2 tbsp -
- Oil to fry -
- for curry; -
- tamarind water 1/2 cup -
- red chili powder 1 1/2 tsp -
- Turmeric powder 1/2 tsp -
- Salt to taste -
- sugar 1/2 tsp -
- Onion : 1 no -
- Fennel seed 1 tsp -
- sesame oil 3 tbsp -

Instructions
- In a bowl add marinate ingredients and marinate for 10 mins
- mean while finely chop the onion
- In a bowl add tamarind water, red chili powder, salt, turmeric powder and sugar and mix it
- In a kadai heat the sesame oil and temper the fennel seed
- saute the onion until it golden brown
- add deep fried brinjal and mix well
- allow to cook until it becomes thick consistency
- now brinjal pachidi ready to serve
