
- For preparing Kerala Sun Dried Mango Pickle, first dice the mangoes and remove the seeds.
- Drain it immediately.
- Sun dry the mangoes for 2-3 days.
- Powder fenugreek seeds and mustard in a mixer grinder.
- Heat oil in a vessel, add mustard seeds and add crushed ginger garlic. Saute for 2 minutes.
- Add vinegar and combine well.
