Kerala Vegetable Curry A tasty curry with vegetables 1 no Carrot10 nos BeansCauliflower (A few florets)2 nos Potatoes1 no Onion (large)2 nos Green chillies1/2 tsp Chilly powder1/4 tsp Turmeric powder3 tbsp Coconut milk powder1 tsp Kasoor methi1 tsp Black gram (Uzhunnuparippu)1 tsp Mustard seedsCurry leaves (A few)Salt (As reqd) Pressure cook all the vegetables, onion and split green chillies with enough water, salt, turmeric powder and chilly powder.Heat 1 tsp of oil in a pan.Splutter black gram, mustard seeds and curry leaves.Put the cooked vegetables into this and pour the coconut milk.When it starts boiling, remove from flame and put kasoor methi and cover the pan.:- Serve with chappathi and roti.
