Khichadi A variation of the traditional rice-dal dish 3 cups Rice (Parboiled rice or Puzhukkalari)1 1/3 cups Red gram (Thuvaraparippu)2 nos Onion (chopped, medium)2 nos Tomato (chopped, large)3 nos Green chillies4 - Garlic pods1" piece Ginger1 tsp Chilly powder1 tsp Coriander powderAsafoetida (A pinch, Kayam)1/3 tsp Garam masala (optional)Salt (As reqd)8 - Fenugreek seeds (Uluva)4 nos Cloves (Grambu)6 nos Peppercorns (Kurumulaku)1 stick Cinnamon (Karugapatta)1 tsp Cumin seeds (Jeerakam)2 tbsp Groundnut/Sunflower oil Clean the rice and red gram and soak it in water.Heat 2 tbsp of oil in the pressure cooker.Add fenugreek seeds followed by cloves, pepper, cinnamon and cumin seeds.Add onions and crushed ginger, chillies and garlic and saute it.Add chilly powder, coriander powder, asafoetida, garam masala and salt and mix well.Add tomatoes, mix well and cook for 3 - 4 mins.Drain off the water from rice and red gram and add it to the mixture in the cooker.Mix well and cook for 5 mins.Keep stirring so that it doesn`t stick to the bottom of the cooker.Add enough water (appx. 7 cups) so that there is a layer of 1.5 cm of water floating on top of the rice-dal mixture.Mix well and then close the cooker with it`s lid.Pressure cook upto 3 whistles.:- Serve hot with curd and pickle.
