Navarathna Kurma Highly rich & delicious kuruma with paneer and vegetables 100 gm Paneer2 cups Mixed diced vegetables (Carrot, Beans, Peas, Potatoes & Cauliflower)3 nos Tomatoes2 nos OnionsGinger (garlic paste - 1 1/2 tsp)1/2 tsp Turmeric powder2 tsp Coriander powder1 1/2 tsp Chilly powder1 1/2 tsp Garam masala1 cup Milk2 tbsp Cream3 tbsp GheeCashewnuts (As reqd)Salt (As reqd)Coriander leaves for garnishing Dice paneer into small pieces.Deep fry them and keep aside. Grate onions. Put tomatoes in hot water for 10 mins, peel the skin and mash. Heat ghee in a pan.Fry onions followed by ginger-garlic paste on a low flame, till the ghee separates from it. Add mashed tomatoes, turmeric powder, coriander powder, chilly powder, garam masala and salt.Add cooked vegetable pieces and allow it to boil.When the gravy is thickened, add milk and cream. Boil for a minute. Add paneer pieces before removing from fire. Fry cashewnuts in little ghee.Add the fried cashews and mix well.Garnish with coriander leaves.:- Serve with rotis. North Indian
