North Indian Egg Vindaloo Hard-boiled eggs in a spicy but tasty gravy 4 - Hard boiled eggs2 nos Onion4 nos Dry red chilies (Kollamulaku)5 nos Garlic pods1 piece Ginger½ tsp Cumin seeds (Jeerakam)1 piece Cinnamon (Karugapatta)1 tsp Garam masalaVinegar (¾ cup)1 tbsp Sugar2½ tbsp GheeSalt (As reqd) Grind the red chillies, garlic, ginger and cumin seeds with a little vinegar and salt to taste.Chop the onions and fry in ghee.Add the ground paste and cinnamon to it.Add sugar, vinegar and garam masala.Shell the eggs, cut into halves, lengthwise and add to the curry.Cook till the gravy thickens.:- Serve with rice or rotis.
