North Indian Style Pav Bhaji The best pav bhaji u ever tasted 4 nos Potato (boiled and mashed, medium)1 cup Cauliflower (don’t add stem, chopped)1/2 cup Green peas (boiled and smashed)Ginger (garlic paste - 1/2 tsp)1 tsp Red chilly powder1 no Onion (chopped, big)1/4 tsp Turmeric powder1/4 tsp Garam masala powder1 no Tomato (chopped)1/2 tsp Sugar2 tbsp Milk malai or cream2 tsp ButterPudina leaves or coriander leaves for garnishing2 tbsp OilSalt (As reqd)1/2 a Lemon juicePav Heat oil in a pan.Add onion and fry, till the raw smell goes off.:- Do not allow it turn golden.Add cauliflower, salt, ginger-garlic paste, red chilly powder, turmeric powder, garam masala powder and tomato.Cook for a few mins.Add the potatoes and green peas followed by 1 cup of water.Cover and cook for a few mins.After opening the lid, add lemon juice.Smash the contents with a smasher or a spoon.Add water, if needed.Add milk malai, sugar and mix well.Add butter and cook for 2 mins.Garnish with finely chopped pudina leaves and onion rings.For Pav:- 1)Heat 2 tsp of butter in a pan.Fry both the sides of pav, till it turns light brown.
