2 cups All purpose flour (sieved, Maida)2 cups Sugar (powdered)2 tsp Baking powder2 tsp Pineapple essence50 g Sugar100 g Butter100 g Pineapple (canned)4 nos Eggs (beaten)Cream (whipped)1/2 tsp Salt For preparing pineapple pastry, fold in the powdered sugar with eggs. Beat it well till the sugar dissolves completely.Then add in maida, baking powder, essence and salt gradually, beating vigorously. Keep it aside.Drain the syrup from the canned pineapples and keep it aside.Grease a baking tray and arrange a butter paper in it. Put the butter on top and when it melts, arrange the pineapple slices, pour the cake batter over it and bake till well cooked.Remove and cool thoroughly before cutting into pastries.Pineapple pastry is ready.
