Ingredients
- Cooked rice(washed, drained and cooked) - 1.5 cups
- To be ground to a paste (do not add water) -
- Raw mango(peeled and grated) - 1 cup
- Coconut - 4 tbsp
- Red chillies - 2 nos
- To temper -
- Split Bengal gram(kadala parippu) - 1 tsp
- Split Black gram(Uzhunnu paruppu) - 1 tsp
- Peanuts - 1 tbsp
- Mustard seeds - 1/2 tsp
- Dry red chillies(broken) - 1 no
- Asafoetida(A pinch, Kaayam/ Hing) -
- Turmeric powder(optional) -
- Vegetable oil - 2 tbsp

- For preparing raw mango rice, grind raw mango, grated coconut and red chillies without adding water to a coarse paste. Keep aside
- Now heat oil in a pan, add mustard seeds let it splutter.
- Then add split bengal gram, split black gram, turmeric powder and asafoetida. Allow it to become a bit brown.
- Toss in the dry red chillies and peanuts. Roast until the peanuts turn slightly brown.
- Add the cooked rice and mix well until it is coated well. Check and add salt only if required.
- Raw mango rice is ready. Serve hot.
