  • For preparing simple chicken curry, pour boiling hot water on the chicken and keep it for about 10-15 minutes. Immerse it completely in hot water, so that it gets soft evenly.
  • Take the chicken out of the water, add oil, chicken masala, ginger-garlic paste and salt. Mix it well. Make sure there`s enough so that the chicken is nice and yellow brown. Allow it to marinate for at least 40 minutes.
  • While the chicken is marinating, fry the onions till golden brown in colour.
  • Add some chicken masala powder (very little - just enough to brown the onions) and fry a little more. 5)Toss in the tomato and fry till it becomes mushy.
  • Add salt and a little cardamom powder.
  • If you want the gravy to be thick, put the onion + tomato mix into the mixer, along with green chillies, curry leaves and coriander leaves. Grind it to a fine paste
  • Pour this mixture into your kadai, add the chicken, add a little water, salt and sugar to taste. Allow it to simmer and cover the kadai with a lid for 10 minutes, stirring it in intervals.
  • Simple chicken curry is ready. Serve hot.
