  • For preparing simple egg curry, heat oil in a pan.
  • Saute the chopped onions till it becomes golden brown in colour.
  • Add the ginger-garlic paste, curry leaves, green chillies and tomatoes. Fry well.
  • Then add red chilly powder, coriander powder, turmeric powder, garam masala and salt.
  • Pour a little water and allow it to bubble.
  • When it starts to boil, add in hard boiled eggs.
  • Garnish with coriander leaves and remove it from the flame.
  • Simple egg curry is ready. Serve hot with paratha, dosa, idlis, ect.
