250 g Snake gourd (cut into small pieces)1 no Potato (cut into small pieces)1 no Onion (chopped)1 no Tomato (chopped)1/2 tsp Garlic1/2 tsp Turmeric powder1 no Green chilly1 no Red chilly1/2 tsp Garam masala powder1/2 tsp Coriander powder2 spring Coriander leaves1 spring Curry leaves1/2 tsp Cumin powder (Jeerakam)1/2 tsp Butter1 tbsp OilSugar (A pinch)Salt (As reqd)Water (As reqd) For preparing snake gourd/padavalanga with potato, saute the vegetables: snake gourd, onion and potato in hot oil for 5 minutes and add required salt.Make a fine paste of green chilly, garlic and cumin powder.Fry red chilly in hot oil and add the ground paste, turmeric powder, coriander powder, curry leaves and 1 tbsp of water. Fry for a minute.Add the tomato and cooked vegetables. Mix well and add salt, sugar and garam masala.Pour 1/2 cup of water and cook covered for 5 minutes.Transfer into a serving dish and pour the melted butter over it. Garnish with coriander leaves.Snake gourd/padavalanga with potato, a balanced as well as fibrous vegetable, is ready. Kerala
