Spicy Pesarattu is a healthy protein packed breakfast dish prepared from whole green gram and herbs. You will find the dish very popular in Andhra Cuisine. Serve the thin crepe or dosa with ginger chutney that makes an amazing combo. This is a tasty traditional styled dish very commonly seen in Telugu speaking households. The term Pesarattu is a blend of two Telugu words: ‘Pesara’ and ‘Attu’. Pesara is referred as Green Gram and Attu is dosa or crepe. Now let us see how Spicy Pesarattu is prepared. Soak green gram for 5-6 hours in water. Grind with required spices and herbs to a smooth dosa batter. Make sure that the batter is not watery while grinding. Add only required water. The batter is spread out in a hot griddle into thin dosas or crepes. Making the crepe or dosa thin, comes by practice and this tastes better.

Ingredients
  

  • 2 Cups Cherupayar (Greengram Dhal) Soak the Cherupayar in normal water for about 5-6 Hrs.
  • 2 Tbsp Rice flour
  • 2 Nos. green chilli
  • 1 Inch Ginger
  • Salt To taste
  • Gingelly Oil/Ghee As required for making Pesarattu

Instructions
 

  • Remove water from the cherupayar and grind it with green chilli, ginger and salt. Make a batter of these Ingredients along with rice flour and keep this batter aside for some time.
  • Heat Tawa/Dosa making stone and apply some oil with a brush on the Tawa/Dosa making Stone. Spread the batter with a medium sized ladle on the Tawa/Stone.
  • Spread the batter in round shapes as we spread for dosa and apply about one tsp oil/ghee again on top of the spread Batter and allow to dry/cook it properly. Continue this procedure for making more Pesarattu.
  • Spicy Pesarattu is ready. This Pesarattu can be served with Coconut/Onion Chutney or Pickle or Sambar.
