Stuffed Brinjal Curry Stuffed brinjal curry 10 nos Brinjals (small)1 1/2 tsp Peas dal (split)1 1/2 tsp Black gram (Uzhunnuparippu)1 1/2 tsp Coriander seeds10 nos Whole red peppersSalt (As required)Oil (As required) Fry the above ingredients: peas dal, bleack gram, coriander seeds and whole red peppers in one spoon of oil and grind it to form a thick paste.Cut 10 small brinjals diagonally so that the stem portion of the brinjal opens up.Stuff the brinjal with the ground paste.Heat oil in a fry pan.Put the brinjals in it and cook over low flame.Close the pan with a lid and cook for about 10 minutes. Do not deep fry it.:-Serve hot. North Indian
