Tender Coconut Pudding | Elaneer Pudding

Tender Coconut Pudding is a refreshing, creamy and delightful dessert bursting with flavors of tender coconut. This is the perfect dessert to indulge in at the peak of summer or anytime you are fed up and want a change in variety. Both tender water of young green coconuts and tender flesh is required for making the unique dessert. The process of preparation begins by extracting water from tender coconuts. Make sure that the coconuts are at the right stage of maturity. Cut open the top of coconuts to extract the refreshing water. Tender coconut water is clear, tastes sweet and has a subtle flavor of coconut. The next step is extracting the coconut flesh. Coconut flesh is jelly like and soft with a delicate taste and flavor. The flesh is finely chopped for adding to the dessert. For preparing a pudding base, milk, condensed milk and sugar is heated together. Milk is added to enhance the creaminess and richness of the pudding. Condensed milk is added to provide sweetness and extra sugar is added to increase overall sweet flavor.

While preparing Tender Coconut Pudding, China grass also known as agar-agar, is used for thickening the dessert. China grass grants the pudding a jelly like consistency and helps it set. Touch of vanilla essence enhances the taste and flavor of the pudding and complements the coco nutty flavor. The prepared Elaneer Pudding is poured into bowls and set apart for cooling. Cooling helps the china grass to solidify resulting in a slightly firm, smooth and creamy texture. The dessert is best served when chilled allowing you to enjoy the tropical flavors. Elaneer Pudding can be served on its own or paired with a dollop of cream for extra indulgence. The creamy dessert will sure impress your guests and will be a perfect delightful treat.
