Vegetable Pasta

Grated veggies are cooked and tossed in with spaghetti

Ingredients
  

  • 1 no Leek grated
  • 2 nos Thin courgettes grated
  • 3 nos Carrots grated
  • 200 g Spaghetti
  • 40 g Butter
  • 1 tbsp Oil
  • Pepper powder As reqd
  • Salt As reqd

Instructions
 

  • For preparing vegetable pasta, boil the leeks in salt water for 4 minutes and drain the water.
  • Blanch the carrots for 3 minutes in salt water.
  • Then add in the courgettes and cook it for another 2 minutes. Drain the water.
  • Cook the pasta in salted boiling water with 1 tbsp of oil. Drain once they are lightly firm.
  • Transfer the pasta into a salad bowl with 20 grams of butter and 1 tbsp of water. Mix it gently with the cooked veggies.
  • Season with pepper powder.
  • Vegetable pasta is ready. Serve hot.
