Oven cooked veggies placed in the bread and lined with spinach paste mixture

  • 2 tbsp Mushroom finely sliced
  • 2 tbsp Onion finely sliced
  • 2 tbsp Cucumber finely sliced
  • 2 tbsp Carrots finely sliced
  • 2 tbsp Red capsicum finely sliced
  • 2 1/2 cup Spinach chopped
  • 2 clove Garlic grated
  • 2 tbsp Cheddar cheese grated
  • 3 tbsp Mayonnaise
  • 1 tbsp Olive oil
  • 4 Bread slices


  • For preparing vegetable sandwich, first preheat oven to 450 degrees.
  • Spread the vegetables on a baking tray: mushroom, onion, cucumber, carrots, red capsicum and mix well with olive oil. Cook for 12 minutes until veggies are tender.
  • Grind spinach, garlic, cheese and mayonnaise into a smooth mixture.
  • Spread the spinach paste on the bread.
  • Top with the cooked vegetables and place a slice of bread on top of it.
  • Vegetable Sandwich, a yummy as well as nutritious breakfast recipe for kids as well as elders is ready. Serve the vegetable sandwich with ketchup.
