Almond Pudding is an enjoyable dessert that exhibits the rich & nutty flavors of almonds. The creamy comforting treat can be served chilled or warm. The pudding consists of a base prepared with sweetened milk and almond paste. Almonds are soaked in water and ground to a paste after removing the skin. Additional flavoring agents can be added for enhancing the taste of Almond Pudding. To thicken the pudding I have added some soaked china grass to the milk mixture. After adding china grass the milk mixture is stirred well and a pudding like consistency with a smooth texture is attained. Put off the flame. Remove from stove and cool the pudding for a while. I have also garnished the pudding with dates syrup for enhancement. The pudding is poured into a large serving bowl or poured into individual serving bowls. Almond Pudding can be savored warm or refrigerated until set and chilled. Some people love to garnish the pudding with almond slices or a dollop of cream for extra indulgence.

Almond Pudding is a versatile pudding dish that can be customized to suit your tastes. For a more healthier version, almond milk can be used instead of regular cow’s milk. The quantity of sugar can be adjusted as per personal preference since we are adding sweetened condensed milk too. Ingredients
  

  • 500 ml Milk
  • 8 g China grass
  • 1 Cup Almond Soak in hot water for 15 minutes and remove the outer skin.
  • 3/4 Cup Sugar
  • 1/4 Cup Condensed Milk
  • Dates syrup for garnishing Optional

Instructions
 

  • Soak the chopped China grass in 1/2 cup water for 30 minutes.
  • Boil the milk by adding sugar and condensed milk.
  • Grind the soaked and peeled almond into a coarse paste.
  • Add it into the milk and stir well.
  • Melt the China grass in medium flame and pour it into the milk. Mix well and turn off the flame.
  • Pour it into a pudding tray and garnish it with some dates syrup. Refrigerate it for 3-4 hours and serve.
