Baked cod fish with other ingredients

Ingredients
- Fresh cod fillets - 4 slices
- Tomatoes - 400 g
- Shallots(Kunjulli) - 2 nos
- Parsley(chopped) - 3 springs
- Dry white wine - 50 ml
- Butter - 60 g
- Pepper powder(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing baked fresh cod, peel and chop the shallots.
- Fry the shallots and parsley with 10g butter in a saucepan.
- Remove the skin and seeds of the tomatoes. Chop them.
- Pre heat the oven at 200 degrees celsius.
- Add in tomatoes to the shallots.
- Pour white wine, salt and pepper. Bring it to boil.
- Leave it to simmer for 15 minutes on medium flame. Convert it to an oven dish.
- Arrange the fish slices on top of it.
- Sprinkle salt and pepper. Bake it for 15 minutes in the oven.
- Keep the fish warm and pour the juices into the blender. Add in 50g of butter and blend it.
- Baked fresh cod is ready. Serve the blended sauce with the fish.
