Beef Varutharachathu is a tasty traditional dish of Malayali community. Cubed beef in fat rich spicy gravy is simply awesome. Ingredients
- Beef - 2 lbs
- Onion(thinly sliced, large) - 1 no
- Tomato(chopped, large) - 1 no
- Turmeric powder - 1/2 tsp
- Ginger(garlic paste - 1 tbsp) -
- Tomato paste - 1/2 tbsp
- Coconut pieces - 1/4 cup
- Mint leaves(Pudhina) - 5 -
- Coriander leaves - 1 small
- Oil - 3 tbsp
- Salt(As reqd) -
- For Masala: -
- Coriander seeds - 2 tbsp
- Fennel seeds(Perinjeerakam) - 2 tbsp
- Whole Black Pepper - 1 tsp
- Dry red chillies(Kollamulaku) - 3 nos
- Cardamom(Elakka) - 2 nos
- Cinnamon(Karugapatta) - 1 inch
- Bay leaves(Karuga/Vazhana ela) - 2 nos
- Cloves(Grambu) - 8 nos

Instructions
- Clean and cut the beef into 1 inch pieces.
- Heat a pressure pan on medium heat.
- Add all the spices for the masala and roast them until a nice aroma emerges.
- :- Make sure to watch it constantly so that it does not burn.
- Allow the spices to cool and grind it into a fine paste by adding a little water.
- Add 2 tbsp of oil in the pressure pan.
- Add the onions and saute, till it becomes translucent.
- Add the tomato paste and cook for 1 min.
- Add the ground masala, turmeric powder, chopped tomatoes and fry for another 2 mins.
- Add the beef, mint leaves, salt and some coriander leaves along with 2 cups of water.
- Cover and cook on medium flame upto 4 - 5 whistles.
- Once the pan is cooled, open the lid and cook it for some more time until the gravy thickens.
- Garnish with coriander leaves.
- :- Serve hot with rice or chappathi.
