Cashew Nut Curry is a rich and exotic curry dish, very popular in Indian Cuisine. It can be served as a wonderful party dish for special occasions. The pure vegetarian or vegan dish tastes best with naan or paratha. The delicious dish can be served with rice dishes as well. Different regions in India have their own versions of Kaju Curry prepared with or without coconut milk. The spicy coconut flavored curry dish tastes excellent and is one of the best dishes in Indian Cuisine. While cooking with cashews, make sure that cashews absorb some flavor and salt from the dish. Cashews as such are bland in taste so it has to absorb flavors by simmering the curry dish. This is one of the easiest dishes that can be cooked with minimal ingredients and is generally served as the main dish in North Indian Cuisine. The combination of crunchy cashews blended with a spicy coconut flavored gray is exotic and special.

The lip smacking Kaju Curry is one of my favorite dishes. The creamy coconut flavored curry dish is simply awesome. You can adjust the spicy levels as per requirement. When kids are around, you can adjust the spiciness since kids prefer it mild and creamy textured. Cashews are rich in heart healthy fats, fiber, protein and low in sugar. They are also a rich source of magnesium, copper, and manganese. Cashews are rich in vital nutrients required for immunity, bone health, brain health and energy production. Consuming cashews in large numbers can lead to negative impact like kidney damage and other chronic health problems since they have high oxalate content. Cashew Nut Curry | Kaju Curry

  • Cut the Cashews (vertically) into two pieces and take the nuts out and keep them in a plate.
  • Change the nuts into a small vessel, add a little quantity of salt and about a cup of water and cook it for about five minutes in low flame.
  • After five minutes, remove water from the Cashew nuts and keep the nuts aside.
  • Take Onion, Green Chilli and Ginger slices in a cooking vessel and add Coriander, Red Chilli, Turmeric powder and Salt to taste.
  • Add Coconut milk and boil this mix for about 10 minutes and then add the cooked Cashew-nuts. Cook it further for about 5 minutes or till the mix gets cooked properly. If necessary add some more water.
  • Heat oil, burst mustard seeds and then add chopped shallots/onion and curry leaves. When colour of this mix turns into golden/brown add it into the already prepared curry dish.
  • Cashew Nut Curry is ready. Serve with chappathi/poori/cooked rice.
