Fried cauliflower/gobi/pookosu cooked with vegetable stock, other ingredients and later blended with double cream

Ingredients
- Cauliflower florets(chopped) - 250 g
- Nutmeg(grated, Jathikka) - 1/4 tsp
- Onion(chopped) - 1 no
- *Vegetable Stock - 3/4 litre
- Carrot(grated) - 1 tbsp
- French beans(chopped) - 1 tbsp
- Green chilliy(chopped) - 1 no
- All purpose flour - 1 tbsp
- Almonds(ground) - 25 g
- Double cream - 50 ml
- Vinegar - 2 tsp
- Butter - 25 g
- Roasted almond flakes - 1 tsp
- Parsley(chopped) - 1 tsp

Instructions
- Melt butter in a pan and saute onion and cauliflower for ten minutes and keep aside.
- Fry carrot, beans and green chilly in the same pan. Add vinegar.
- Now add the vegetable stock. When it boils, simmer the flame and add nutmeg and ground almonds. Cover and boil in low flame for 15 minutes.
- Blend the cauliflower mixture along with double cream till smooth.
- Pour cauliflower/gobi/pookosu soup into the vegetable pan.Mix well.
- Pour the soup in a serving bowl and garnish with chopped parsley and almond flakes.
- Healthy as well as tasty cauliflower/gobi/pookosu soup is ready. Serve hot and enjoy.
