  • 70 g Parmesan cheese finely diced
  • 30 g Butter
  • 20 g All purpose flour sifted, Maida
  • 1/4 litre Milk
  • 4 nos Eggs separated
  • Pepper A pinch
  • Nutmeg grated
  • Salt As reqd
  • Butter to grease the dish


  • For preparing cheese soufflT, grease the dish with butter.
  • Preheat the oven at 200 degrees celsius.
  • Take a sauce pan, melt butter and add in the maida. Mix until it starts bubbling.
  • Add in milk and cook for 10 minutes. Stir continuously till the sauce becomes thick.
  • Remove it from the flame and add egg yolks.
  • Beat the egg whites with salt till it becomes stiff.
  • Add it to the above mixture with the cheese and mix well.
  • Pour it in a dish and bake for 35 minutes.
  • Cheese soufflT is ready. Serve hot.
