Chena-Vanpayar Eriserri Elephant yam(Chena) and Black-eyed beans(Vanpayar) cooked with coconut paste 2 cups Elephant yam(cut into small cubes) (Chena)Black (Vanpayar) - 1 cu)1/2 cup Grated coconut1/4 tsp Cumin seeds5 - Shallots (Kunjulli)3 - Red chillies (Kollamulaku)1 sprig Curry leaves1/2 tsp Turmeric powder1 tsp Chilly powder1 tsp Mustard seeds1/2 tsp Black gram (Uzhunnuparippu)1 tsp OilSalt (As reqd) Soak vanpayar in water for 3 - 4 hours.Cook it in a pressure cooker upto 4 - 5 whistles.:- If not soaked, then you need to cook for more than 5 whistles.Add chena, turmeric powder, chilly powder and salt and cook upto 1 whistle.Grind together coconut, 1 shallot and cumin seeds to a fine paste.Add the above paste into the chena mixture.Heat oil in a pan.Splutter mustard seeds.Add red chillies, black gram and curry leaves.Add the above seasoning into the chena mixture.:- Will be more tasty if coconut oil is used for seasoning.
