Chicken Majbous Rice cooked in chicken stock 3 1/2 cups Basmati rice1 kg Chicken6 cups Water1/4 cup Rose water with saffron4 nos Cardamom (Elakka)4 nos Cinnamon (Karugapatta)4 nos Cloves (Grambu)4 nos Garlic podsGinger (sliced)1 nos Onion (cut into 4 halves, medium)1 tbsp Tandoori powder1 tsp Coriander powder1/2 tsp Cinnamon powderSalt (As reqd)1/2 to Bengal gram (Channa dal/Kadalaparippu)1 1/2 tbsp OilFor daqqus(tomato sauce, Grind all these ingredients to get a paste and cook over medium fire for 5 minutes):2 nos Tomato (boiled, medium)2 nos Green chilliesTomato paste (A small pack)2 nos Garlic pods Take a large container and add 6 cups water to it.Clean the chicken and cut into big pieces and add it to the water.Add the onion, ginger, garlic, cloves, cinnamon and cardamom with salt.Cook chicken on medium fire.Remove chicken from container when cooked and strain the broth.Marinate the chicken with tandoori powder(dissolve tandoori powder in 1/4 cup water) and cinnamon powder for about 1/2 hour.Take another container and add some oil.Add 1 tsp coriander powder to it and saute.Immediately, add the soaked rice and fry for few seconds.Add the broth and cook over medium fire.:- Do not stir rice in between.After cooking, sprinkle rose water and saffron on rice surface(soak saffron in1/4 cup of rose water and heat over low fire for few seconds).Now either fry chicken in oil till red or bake the chicken in hot oven (250 degree C) till it is red.For serving:- 1)Put the rice in a dish.Add the cooked channa dal and place chicken over it.:- Serve with tomato sauce and green salad.
