This One Pot Chicken Pulao is a finger-licking dish cooked with mild Indian herbs and spices. The dish is prepared keeping in mind the satiating blend of chicken, tomatoes, onion and aromatic basmati rice or biriyani rice. This dish is perfect for a quick meal where everything is put into one pan and the result is a delicious flavourful Pulao. Chicken Pulao is a delicious dish in Indian Cuisine that is super easy to prepare for a weekend family dinner. Unlike Chicken Biriyani, this is a mildly spiced dish that is not that heavy on your tummy. Its light, delicious and very nutritious too. Traditionally, a Chicken Biriyani is prepared by layering partially cooked meat and biriyani rice. The pot is then dum cooked in low flame to seal the flavors. Also a lot of time and effort is required for making chicken biriyani. This Homemade Chicken Pulao comes to my rescue when i am short of time and want to relish a flavorful biriyani dish.

The best part of Homemade Chicken Pulao is that the dish is entirely cooked in a pressure cooker. You can save a lot of time. Still, there are a lot of variations while preparing a Chicken Pulao. Some people utilize meat stock to cook the pulao while in South India you can observe people using coconut milk to cook the rice. But here i have used plain water. You can term the dish as kids friendly as it requires quite a few spices. Kids love mildly spiced dishes and you can cut down on green chillies if required.   • Heat oil in a pressure cooker and add one sliced onion and fry until golden brown in colour. Take it from the oil and keep aside. Then add cloves, cinnamon, cardamom, and black pepper corns and fry for a few seconds.
  • Add chicken pieces and saute for 5 minutes.
  • Add ginger garlic paste, onion and salt as required and saute for another 5 minutes..
  • Add sliced tomato, green chilly, half of fried onion and mix well. Simmer the heat and cover and cook until chicken is 80% done. Remove the lid and cook on high heat until all the water is reduced.
  • Then add water and washed and drained rice, Drizzle some ghee on top. Pressure cook it for one whistle. Open the lid and fluff the pulao with a fork.
  • Chicken pulao is ready now. Garnish with fried onion and serve hot with raita.
