  • 1 1/4 cup Corn kernels cooked
  • 2 nos Tomatoes chopped, ripe
  • 2 nos Zucchini cut in slices
  • 1 no Onion chopped
  • 1/4 cup Tomato puree
  • 1/2 of Red pepper seeded and chopped
  • 2 cups Vegetable Stock


  • For preparing yummy corn with zucchini casserole, put cooked corn, chopped tomatoes, zucchini, onion, tomato puree and chopped red pepper in a large frying pan.
  • Cook the corn mixture over medium heat for 5 minutes.
  • Add vegetable stock and bring to boil. Lower the heat and simmer for 20 minutes until the gravy acquires a desired consistency.
  • Corn with zucchini is ready and serve hot.
