Dum aloo is a auethentic Kashmiri dish usually done in a gravy form and here it is with a difference with a dry aloo. This seems to be a little complicate dish but when the dish is ready to be served nothing can beat this. There is a whole lot of spices to be included in this recipe. The potatoes are boiled and then fried in oil then transferred to the spice mixture to bring out this awesome dish.

- potato 1/2 kg -
- curd 3 sp -
- chili powder 1 sp -
- ginger powder 1/2 sp -
- to saute; -
- hing 1/4 sp -
- turmeric 1/4 sp -
- coriander crush 1/2 sp -
- red chili powder 1 sp -
- souf powder 1/4 sp -
- cardamom 1 -
- clove 1 -
- Cinnamon: 1 -
- garam masala 1/2 sp -
- Coriander leaves : to garnish -

Instructions
- boil potato and poke with fork
- fry aloo in oil and keep aside
- mix curd with chili powder and ginger powder.
- add souf powder, cardamom powder, cumin powder, clove powder,cinnamom powder and curd mixture.
- add fried potatoes to it and give a stir.
- add garam masala and garnish with coriander and serve.
