Flavoured Pulao Rice A nice Pulao recipe which tastes really good & different 1 1/2 cups Good quality Parboiled Rice4 long French beans1 no Capsicum (optional)3 - Green Peas/Corn or both1 no Cauliflower (cut it into florets, medium)2 nos Carrots (diced)1 no Onion (medium)Salt (As reqd)1/2 tsp SugarFried Paneer (about 12 small cubes)3 cups Water4 tbsp GheeFor masala paste:-3 - Roasted peanuts1 big/medium Golden brown fried onion2 tbsp Fried grated coconut1/2 tsp Fried fennel seeds (Perinjeerakam)2 - Crushed ginger & garlic1 tsp Powdered cinnamon (Karugapatta)1 tbsp Powdered cardamom & sugar mixture (Elakka)1 tsp Bay leaves (Biriyani leaf)1 no Geen chilly1 no Fried Red chilly1/2 tsp Coriander leaves2 leaves Curry leaves Cook rice separately in a pressure cooker by adding along a tbsp of oil and 1/2 tsp of salt.:- Make sure u don`t overcook. After u have made the cooker stove off, take the cooked rice out & add extra fresh water to it.Drain it & keep aside.Make the masala paste by mashing the ingredients of masala paste in a mixer grinder to a smooth paste. Sprinkle water while mashing if reqd.Heat 2 tbsp of ghee in a non stick pan.Fry the sliced onion.Add the above vegetables & fry. :- You can spray some water in between so as to cook well. Once cooked, add 2 more tbsp of ghee.Add the masala paste & stir fry along with the vegtables. Add more ghee & spray water if reqd. :- Remember it should not be watery. Cover & cook for 5 mins in simmed stove.Once vegetables are cooked, take the rice & pour above the cooked vegetables. Slowly mix it with a fork so that rice is not cut. :- U may add some biriyani masala powder too along with the masala paste if u feel that enough flavour is not there. American
