Ingredients
- Basmati rice - 2 cups
- Chicken(1 1/2 kg) - 3 lbs
- Chilly powder - 1/2 tsp
- Coriander powder - 1 1/2 tsp
- Cinnamon(Karugapatta) - 10 pieces
- Cloves(Grambu) - 10 nos
- Cardamom(Elakka) - 8 nos
- Ginger - 1" piece
- Garlic pods - 8 nos
- Mint leaves – 2(Pudhina) - 3 stems
- Coriander leaves - 2-3 stems
- Cashews - 20 nos
- Raisins(Onakka munthiri) - 15 nos
- Ghee/Oil/Butter(As reqd) -
- Curd - 3 tsp
- Rose essence - 1 tsp
- Yellow color powder(A pinch) -
- Onion(big) - 3 nos
- Tomato - 3 nos
- Green chillies - 2-3 nos
- Oil for frying -
For marinating:-
- Chilly powder - 1/2 tsp
- Coriander powder - 1 1/2 tsp
- Turmeric powder(A little) -
- Black pepper(A little) -
- garlic(ginger paste - 1/2 tsp) -
- Masala powder(Cinnamon-Cardamom-Cloves powder) - 2 tsp
- Lemon juice - 5-6 drops

For marinating:-

Instructions
- Cut the chicken into big pieces(2 inches piece).
- :- Don`t need to cut chicken If you are using Chicken leg pieces. Just make some slits on the piece, so that masala will go in.
- Mix together all the ingredients for marinating the chicken.
- Marinate the chicken with the above paste for approximately an hour.(You can do/prep this previous day and refrigerate it)
- Fry this in oil.
- :- Don't fry the chicken pieces for long time. Otherwise, it will become very dry and hard. The purpose of doing this is to make the pieces little stronger so that it won`t split into small pieces while making curry.
- Heat 2 - 3 tsp of ghee in a thick bottom vessel.
- Add the drained rice into it and fry for about 10 minutes.
- Add water.
- :- For 1 cup of rice, add 1 3/4 cups of water.
- Turn the flame to high and cover with a lid.
- After a while, when water is not visible on top of the rice, open the lid and mix the rice since the rice at the bottom can get burnt.
- After all the water has evaporated, don¦t keep it on stove for a long time.
- When the rice is cooked, switch off the stove and keep it closed for about 30 minutes.
- :- It is okay to switch off the stove even before the rice is completely cooked. Because it will get some cook time while baking.
- Add 1/2 tsp of ginger-garlic paste and cut green chillies and saute` for sometime.
- Add onions and saute` well.
- When it is nicely done, add chilly powder, coriander powder, a little turmeric powder, a little black pepper, a little masala powder and salt and saute again.
- Add curd and mix it well.
- Add fried chicken pieces to it.
- Cover and cook for 10 minutes.
- Add big pieces of tomatoes, cover and cook.
- :- Stir in between. The gravy will become like a paste. It should not be dry or watery. :- Check salt and add more, if needed.
- Fry raisins, cashews, coriander and mint leaves etc in ghee and keep aside.
- For baking biriyani:- a) For Oven Style:- Take a big flat dish.
- :- You can use Aluminium foil too instead of flat dish.
- Coat it with ghee or butter.
- Put the chicken with gravy as a layer followed by a layer of rice (use half portion of cooked rice).
- Mix yellow color powder with rose essence and sprinkle on top of the rice with a spoon carefully.
- Sprinkle 1 tsp of ghee on top of it.
- Sprinkle the fried leaves.
- Sprinkle the fried cashews and raisins on top of it and cover with aluminium foil.
- Bake this in the oven at 375F for about 45 minutes.
- :- If you are making more quantity, you can put that in more dishes and bake in the oven at the same time.
- b)If you don¦t have Oven:- Use a big wide vessel coated with ghee or butter to make biriyani.
- Make layers as described in the above step.
- Cover it with a lid and heat the filled vessel on a low flame for approx 20 - 25 mins.
- :- Check the bottom of the vessel in between with a spoon or something to make sure it is not getting burnt. If it is getting burnt, reduce the heat.
- For serving, take portions from the baked biriyani so that a serving plate will have both rice and chicken with masala.
- :- Serve chicken/nutton biriyani with lime pickle and raita. :- Make raita with onions, tomato, green chillies(optional), curd and salt. :- Use the same quantity of Mutton instead of chicken to make Mutton Biriyani with the same recipe.
- :- Enjoy the biriyani.

You missed few essential spices in your recipe. Jeera. There are 3 types of jeera added to this biriyani(somb, fennel and shajeera).
Did you miss sprinkling of saffron soaked milk?

I am really impressed with how the author has narrated this recipe and i am really excited aboout making this for a function….only i find small error(or rather cofusion) in the making of the gravy part….i noticed that all the spices that have been desribed to make the gravy have actually come from the marinating list…so do i still follow the narration or stick with the spices that were originally in the ingredient list for the gravy??can someone tell me how they proceeded??
I learnt to prepare biriyani from my mother…..and its almost the same method. Only difference is, while preparing the chicken gravy,we grind coriander + mint leaves AND poppy seeds(soaked for a few hrs) with shredded coconut….this way the gravy becomes really thick and nice.
But in this days of fast life, just imagine spending 3-4 hours in the kitchen to make a meal… who has the time?? Not worth…

I agree with Sushand, u missed out on the 3 types of jeeras. Secondly i would avoid too much use of red chilli pd. So in the marination its good to add 6-7 green chillies instead of red chilli pd. Frying the chicken is not really needed…but i`ll give it a try to see what happens.
Also, for 3 lbs of chicken ideally u can use 5 cups of rice. Also if u want it to be authentic, when chicken is almost cooked u can add a ground paste of coconut , mint an poppy seeds (a spoon of each) to the gravy and thicken the gravy. Key is to not overload it it with too much coriander/chilli powder and keep the flavor very subtle, so that the biriyani has a nice aroma of all the mint rose water/saffron etc., in the right proportion.
Its a good idea to prepare the chicken masala and leave it in the fridge and the chicken always tastes better the next day.
Also for baking i prefer 200 for 1 hr, else the top rice can get crispy.

but i have some doubts about baking. i am a beginner of microwave,
1. actually what is the use of baking this??? i tried with out baking, as i am not so used to microwave
2. whether it will burnt while baking for 45 minutes, because we r not adding any water??? and it is difficult to check the lowest layer without stirring. and stirring destroys its layer by layer decoration.
3. which one we have to use, microwave, convection or a combination, for baking???

So, I try to omit some steps when I don`t have much time. but then I won`t get the exact taste I get with all the steps included. Also, there is an `Instant Biriyani` recipe I added to the Chicken section of this site, which won`t take much time. To me it tastes OK. But nothing compared to this one.

This recipe is awesome..my husband loved it!! He was very impressed. The only problem was cooking the rice..I had to keep on adding more water. I didn`t realize that 1 cup rice, needs 1 and 3/4th cup of water. I only added 3/4 cup of water!! Next time I will get it right!

This is one of the greatest Biriyani`s I have ever had. Even the Americans love this recipe. The person who gave a low rating due to the cooking time, we are talking about taste not fast life (“Burger King” is a good option for you. They have chillie). You must be rating poor on all the croc pot recipes since it takes 10-12 hours to prepare. No words can Descriptionibe this recipe. My American friends go nuts after tasting this Biriyani. I am making this for the Thanksgiving.

this is a excellent reciepe and very useful for people like me,be`cos i was in a search of a good kerala type biriyani.but,i have one doubt,i have heard that,when u bake biriyani start with a layer of rice and end with rice.but here,its written that u must put all the gravy as a bottom layer and above that put all the rice as one layer,then how come the gravy taste will come into rice?will it be good?or put the rice as first layer then gravy as second and rice on the top of it, will be good?anyone help me?thankx.

Adipoli biriyani! All the ingredients just added up so well that it tasted and smelled very nice.
Our rice was a little bit on the cripsier side, may be because we fried it for too long, or was it the baking? I`ll get it right the next time.
3lbs chicken for 2 cups of rice looked a little too much, (may be its because we like more rice.) We used just 1.5lbs for 2 cups of rice.
When the color was added, all the rice became yellow. I think it`ll be better if only a part of it was colored. The white and yellow mix will give it a better appeal.

This is an excellent recipe, I have tried it for both chicken and Goat.
Just one comment to add; it will help if the recipe tells the measurement of the oil to take when preparing the gravy and when frying the chicken or mutton.

This is an awesome recipe. I have tried this recipe several times. Though its a little long, its worth the hard work and time. Especially when i receive all those appreciation at the table. I am so glad i found this recipe. But I`d like to get some advise on the calculation of the ingredients when i cook on a large scale, like if i use more than 1 1/2kg of chicken.
