  • For preparing mangalore goli baje, mix together all the ingredients: maida, curd, ginger, green chillies, besan, curry leaves, asafoetida, baking soda and required salt into a smooth dough.
  • Take care that the dough does not become too thin or thick.
  • Leave the dough aside for 30 minutes.
  • Pluck out small balls from the entire dough.
  • Heat oil in a frying pan and drop the goli baje into hot oil.
  • Deep fry until golden brown in color.
  • Mangalore goli baji, a popular tea time snack, is ready. Serve hot with chutney and enjoy.
