Mathanga Curry Easy Mathanga (Pumpkin) curry 400 gm Pumpkin (Mathanga)2 cups Onions (sliced)1 tsp Garlic4 nos Green chillies3 tbsp Oil1 tsp Mustard seeds1 cup Grated coconut1 tsp Turmeric powder1 tbsp Lime juice3 nos Broken chillies (Kollamulaku)Curry leaves (A sprig)Salt (As reqd) Peel the skin off the pumpkin and cut into small pieces after deseeding. Heat oil in a pan.Splutter mustards along with curry leaves and broken chillies. Add onions, green chillies and garlic and sautT for a few minutes. Add pumpkin along with turmeric powder. Add water and leave it to simmer. Add a 1/2 cup of coconut milk along with lime juice and stir till the gravy is thick. :- Serve hot. Kerala
Tried this recipe. Good. I think lemon juice should be added only in the end (after removing from fire). Otherwise the coconut milk will split.
