Meat Pappas Pappaas/mappas/mappaas using coconut milk and ground spices 1 kg MeatGinger (A small piece)1 no Onion (large )6 nos Garlic pods6 nos Green chilliesCurry leaves (A few)Oil (As reqd)1 tsp Chilly powder1/2 tsp Turmeric powder1/2 tsp Pepper (ground)Ginger (garlic paste - 2 tsp)3 tsp Coriander powder2 tsp Vinegar2 tbsp Yoghurt/CurdSalt (As reqd)1 cup Coconut milkFor masala:Cinnamon(Karugapatta) Cardamom(Elakka) Nutmeg(Jathikka) Pepper(Kurumulaku) Fennel(Perinjeerakam) Cloves(Grambu) Bay leaves(Vazhana/Karuga ela) Mustard Bark of drumstick tree(Muringa tholi) Grind together all the spices and add ginger-garlic paste and grind once again with vinegar.Cut meat pieces as thin as 3 inches long and square shaped.Cook the meat with ground spices, till done. Heat oil in a pan.Fry onions, ginger, garlic and curry leaves.Make wet masala out of chilly powder, turmeric, coriander powder and pepper and roast it.Add meat pieces and mix well.Add coconut milk, vinegar and salt.When the gravy is thick, remove from fire.
