Methi Halwa Yummy sweet made with Fenugreek(Uluva/Methi) & Jaggery 200 gm Fenugreek (Methi/Uluva)50 gm Parboiled rice2 cups Coconut milk200 gm Jaggery (Sharkkara)1 tsp GheeNutmeg powder (optional) Soak methi overnight.Cook with parboiled rice in a pressure cooker upto 4 whistles.Make jaggery syrup using 1 cup water.Tranfer the cooked rice & fenugreek into a thick bottomed vessel and add jaggery syrup & cooconut milk. :-) Coconut milk powder can also be used . 5)Stir well till it thickens and the fenugreek becomes brown in colour.:- The final consistency should be that of halwa.Add the ghee in the end for flavour.Sprinkle nutmeg powder if desired. I never liked to have this methi and my mom prepared this halwa ..but this is tasty n does not have any bitterness
