North Indian Style Vegetable Curry Healthy curry with Vegetables and Whole Moong 2 cups Whole Green gram (Cherupayar)1 cup Cabbage, Carrot, Beans (finely chopped)½ cup Onion (thinly sliced)4 – Green chillies (chopped)½ tsp Turmeric powder1 tsp Chilly powder2 tsp Coriander powder½ tsp Pepper powderSalt (As reqd)For seasoning:-2 tbsp Oil1 tsp Mustard seeds2 – Dry red chillies (Kollamulaku)Curry leaves (A few) Steam cook the vegetables(preferable a Idli steamer).Cook whole green gram in about 2 cups of water.When done, add all the powders along with the cooked vegetables and continue to cook, till done.Heat oil in a pan or a kadai.Splutter mustard seeds and sautT dry red chillies and curry leaves.Pour the above seasoning into the curry and mix well.:- You can also pour a tsp of ghee on top for flavour.:- Serve hot with chappathis or rotis.
