  • 1 no Eggplant cut into small cubes
  • 200 g Small pickling onions
  • 2 nos Zucchini cut into small pieces
  • 1 no Red pepper cut into cubes
  • 200 g Button mushrooms cut into halves
  • 200 g Cherry tomatoes

For preparing marinade:


  • Take a pan and place the pickling onions. Pour some water and boil the onions. When done, drain and cut into halves.
  • For preparing marinade, place red chillies, garlic, basil, oregano, red wine and olive oil in a vessel. Toss well to combine.
  • Add eggplant, onions, zucchini, red pepper, button mushrooms and cherry tomatoes to the marinade and combine well.
  • Marinate the above ingredients at room temperature for 45 minutes.
  • Drain the veggies and preserve the marinade.
  • Thread the vegetables onto oiled skewers and cook in a preheated barbeque grill, basting occasionally with marinade on both sides, for 5 minutes.
  • Yummy ratatouille recipe is ready and serve hot.
