Ingredients
- Eggplant(cut into small cubes) - 1 no
- Small pickling onions - 200 g
- Zucchini(cut into small pieces) - 2 nos
- Red pepper(cut into cubes) - 1 no
- Button Mushrooms(cut into halves) - 200 g
- Cherry tomatoes - 200 g
For preparing marinade:
- Fresh red chillies(chopped) - 1 no
- garlic(crushed) - 2 cloves
- Fresh basil(chopped) - 1 tbsp
- Fresh oregano - 1 tbsp
- Red wine - 2 tbsp
- olive oil - 1/4 cup

Instructions
- Take a pan and place the pickling onions. Pour some water and boil the onions. When done, drain and cut into halves.
- For preparing marinade, place red chillies, garlic, basil, oregano, red wine and olive oil in a vessel. Toss well to combine.
- Add eggplant, onions, zucchini, red pepper, button mushrooms and cherry tomatoes to the marinade and combine well.
- Marinate the above ingredients at room temperature for 45 minutes.
- Drain the veggies and preserve the marinade.
- Thread the vegetables onto oiled skewers and cook in a preheated barbeque grill, basting occasionally with marinade on both sides, for 5 minutes.
- Yummy ratatouille recipe is ready and serve hot.
