Rest of the ingredients:
  • Apple(diced) - 1/2 cup
  • Pineapple(diced) - 1/2 cup
  • Parsley Leaves(roughly chopped) - 1/2 cup
  • Boiled egg whites(quartered) - 2
  • Low(fat mayonnaise - 1 cup) -
  • Low fat fresh cream(optional) - 1/2 cup
  • Pepper powder - 1/2 tsp
  • Salt(As reqd) -

Instructions
  1. Steam all the veggies. :- Steam either in a microwave or in a pressure cooker on idli plates(usually the veggies are boiled for Russian salad, but its healthier to steam because it locks the nutrients in the veggies).
  2. In a wide bowl, take the mayonnaise, salt and pepper. Beat them nicely.
  3. To this add the steamed veggies, fruits, parsley and egg whites and mix them thoroughly.
  4. Refrigerate for half hour and then serve.
