Steam all the veggies.
:- Steam either in a microwave or in a pressure cooker on idli plates(usually the veggies are boiled for Russian salad, but its healthier to steam because it locks the nutrients in the veggies).
In a wide bowl, take the mayonnaise, salt and pepper. Beat them nicely.
To this add the steamed veggies, fruits, parsley and egg whites and mix them thoroughly.
