Soft Corn Tortillas

  • Corn flour : 2 cups
  • Flour (maida) : ½ cup
  • Salt (to taste) : 1 tsp
  • Water : 1 ½ cup


  • In a medium bowl, mix together corn flour and water until thoroughly combined (like you make chappathi atta- this atta is soft, so add water slowly and as required to form a firm dough).
  • Cover and keep aside to rest for 30 minutes.
  • Divide dough into 16 equal - size balls. Using a rolling pin, roll out the balls, like you do a chappathi.
  • Preheat a cast iron griddle to medium - high.
  • Immediately place tortilla on the griddle and allow to cook for approximately 30 seconds, or until browned.
  • Turn tortilla over to brown on second side for approximately 30 seconds more, then transfer to a casserole.
  • Repeat process with each ball of dough.
