- Basmathi rice(soaked) - 2 cup
- Onion(chopped) - 3 nos

- Cauliflower(chopped) - 1 cup
- Potato(chopped) - 1 cup
- Bread slices(diced) - 2 cups
- Green chillies(slit) - 4 nos
- Chilly powder - 2 tsp
- Turmeric powder - 1 tsp
- Garam masala - 1 tsp
- Roasted cumin powder - 1 tbsp
- Biriyani masala - 1 tbsp
- Ginger(garlic paste - 1 tbsp) -
- Bay leaves(Karuga ela) - 1 no
- Cloves(Grambu) - 2 nos
- Cardamom(crushed, Elakka) - 2 nos
- Mint leaves - 1 cup
- Coriander leaves - 1 cup
- Salt(As reqd) -
- Sunflower oil(As reqd) -

Instructions
- For preparing special vegetable biriyani, first boil 4 cups of water.
- Add required salt in it.
- Add green chillies. tomato and saute again. Add all the vegetables and fry for 2 minutes.
- Add turmeric, garam masala, chilly powder, cumin powder, biriyani masala and salt. Add little water and cook the vegetables.
- When done, make this a semi masala.
- Add mint leaves and coriander leaves.
- Add a layer of rice in a thick bottomed vessel and add the masala. Add rice again and mix well.
- Add this to the rice and give a nice mix.
- Special vegetable biriyani is ready.
