  • 3/4 cup Butter softened
  • 1 cup White sugar
  • 2 nos Eggs
  • 1 tsp Vanilla extract
  • 2 1/2 cups Allpurpose flour Maida
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 6 tbsp Strawberry jam
  • 1/4 cup Green icing sugar optional


  • In a large bowl, cream butter and sugar, until light and fluffy.
  • Gradually, add eggs and vanilla and mix well.
  • Sift together flour, baking powder, and salt.
  • Stir flour mixture into the butter mixture, until well blended.
  • Refrigerate the dough for 3 hrs.
  • Preheat oven to 175 C.
  • Grease several biscuit sheets.
  • On a floured surface, roll out 1/2 of the dough at a time to 2 cm thickness.
  • Cut dough into star shapes using an approx 7 cm star shaped cutter.
  • Using a 4 cm star shaped cutter, cut a star into the center of half of the big stars.
  • Sprinkle icing sugar on the biscuits with the center cut out if desired.
  • Put onto prepared biscuit sheets about 2 cm apart and bake for 6 - 8 mins.
  • After biscuits cool completely, spread 1 tsp of preserves in the center of each biscuit that does not have a star cut out in the middle.
  • Place a biscuit with a cut-out on top of the layer of preserves.
  • Pack biscuits in a covered tin to preserve freshness.
