Tasty Tomato Rice
Tomato rice prepared in a simple way
Ingredients
- 6 nos Tomatoes chopped, medium
- 2 1/2 cup Basmati Rice
- 5 cups Water
- 1 no Onion finely chopped
- Ginger garlic paste - 2 tbsp
- 1 no Green chilly slit
- 1/4 tsp Turmeric powder
- 1/4 tsp Fennel seeds powder Perinjeerakam
- 1/4 tsp Pepper powder
- 6 pieces Cinnamon Karugapatta
- 2 nos Bay leaf Vazhana/Karuga ela
- 6 nos Cloves Grambu
- 5 nos Cardamomseeds Elakka
- 2 nos Mace Jathipathiri
- 1/2 tsp Cumin seeds sajeerakam/biriyani jeerakam
- 2 tbsp Clarified butter/ghee
- 15 nos Curry leaves – 10
- 2 tbsp Coriander leaves chopped
- 2 tbsp Pudina leaves chopped
- Salt As reqd
Instructions
- Heat clarified butter or ghee in a pan.
- Add onions and saute till it turns golden brown in color.
- Add chopped tomatoes, green chilly, curry leaves and little salt.
- Saute until the oil separates.
- Add chopped pudina leaves.
- Add rice and sautT till rice turns translucent.
- Add water and allow it to boil.
- Cover the pan and cook in low flame until the rice is done.
- Garnish with coriander leaves. Serve with salad & pickle.
