Thai Pineapple Fish Curry

Ingredients
- Tilapia(boneless, skinless fillets cut into 4" squares, available in sams club or any american grocery store) - 5 nos
- Sliced pineapple(3 slices cut into cubes, better to use can than fresh as its cheaper) - 1 can
- Tomato(steak tomato or 1 large size, cut into big cubes) - 1 no
- Garlic pods(minced, big) - 3 nos
- Ginger(or your little finger size, minced) - 3" piece
- Green chillies(finely chopped) - 5 nos
- Coriander leaves(finely chopped) - 1/2 a bunch
- Fresh green basil leaves(do not chop the leaves) - 10 leaves
- Coriander powder - 1/2 tsp
- Turmeric powder(A pinch) -
- Chilly powder - 1/4 tsp
- olive oil - 2 tbsp
- Coconut milk - 1 can
- Salt(as reqd) -

Instructions
- Heat oil in a frying pan or pressure pan.
- Add fish, ginger, garlic, coriander leaves and green chillies and saute, till the fish becomes translucent(white).
- :- Do not let the fish turn brown.
- Add coriander powder, salt and coconut milk simultaneously to this mixture.
- Heat it for 2 - 3 mins.
- Add chilly powder and 8 - 10 basil leaves and bring them to a boil.
- Garnish with 2 - 3 basil leaves and 2 pineapple cubes.
- :- Serve with fried rice, biriyani, roti, naan, appams or you name it.
