  • 1 cup Long grain brown rice washed and drained
  • Almonds Few
  • 1 no Onion chopped
  • 1 no Garlic crushed
  • 50 g Green beans chopped
  • 50 g Zucchini chopped
  • 1 no Celery stick chopped
  • 50 g Broccoli florets
  • 1 tbsp Currants
  • 1 no Green pepper chopped
  • 1 tbsp Orange rind grated
  • 1 orange Orange juice
  • 1 no Bay leaf
  • 3 tbsp Tamari soy sauce
  • 300 ml Boiling water
  • 1 tbsp Olive oil
  • Salt As reqd


  • For preparing vegetable pilaf, first heat olive oil in a large saucepan and saute chopped onion for a few minutes, stirring occasionally.
  • Add crushed garlic, almonds, rice and saute for 2 minutes.
  • Add chopped green beans, celery, broccoli florets, currants, green pepper, grated orange rind, orange juice and bay leaf. Bring to boil and simmer for 30 minutes with a covered lid.
  • When rice is cooked, add tamari soy sauce and heat for a few minutes. Remove the bay leaf when rice is done.
  • Vegetable pilaf, a tasty nutritious dish is ready. Serve hot.
