Vegetable Seekh Vegetable Seekh ¼ kg Potatoes125 gm Yam4 nos Garlic pods1" piece Ginger3 nos Green chilies2 tsp Lime juiceCoriander leaves (As reqd, chopped)Oil for frying Salt (As reqd) Boil the potatoes and the yam. Mash them and keep aside. Grind together the garlic, ginger, green chillies and salt to a paste. Mix together the above paste, lime juice, coriander leaves and the mashed potato-yam mixture. Divide this mixture into equal portions. Grease a 1/4" thick wooden stick and wrap each of the portions evenly around the stick. Shape the seekh and gently slide off the needle. Deep fry in hot oil till golden brown. :- Serve hot. North Indian
