  • Put saffron in a little warm milk and keep aside (if using).
  • Fry the rice in ghee/oil.
  • Cover the rice completely with milk and water.
  • :- For about 1 cup of milk, add 1/2 cup of water.
  • Add all the remaining ingredients.
  • Cover and cook on a low flame for 15 - 20 minutes.
  • When all the water is absorbed, remove from heat.
  • Garnish with cashews and raisins.

    Zarda as such is a very good recipe. But the recipe shown here for zarda is not correct and will not yield the authentic taste of zarda.
