Aval Uppuma Easy evening snack with Aval or Rice flakes 2 cups Rice flakes (Aval)3 tsp Grated coconut2 nos Green chillies (slit into halves)1" piece Ginger (chopped)1/2 tsp Garlic (chopped)1 sprig Curry leaves1/2 tsp Chilly powder1/4 tsp Turmeric powderSalt (As reqd)1/4 cup Water1/ 2 tsp Mustard seedsBlack gram(Uzhunnuparippu)or 1/2 tsp Bengal gram (Kadalaparippu)Mixed vegetables of choice:-1 cup Potato, Peas, Carrots, Beans (boiled)1 no Onion (chopped)Oil (As reqd) Sprinkle the rice flakes with water to make it soft and keep aside.Heat oil in a kadai or a pan.Splutter mustard seeds.Add black gram and allow it to turn brown.Add chillies, garlic, ginger, onions and curry leaves.Saute, till onions turn light brown.Add the boiled veg, chilly powder, turmeric powder and salt.Saute for 2 mins.Add water.Add the rice flakes and mix well.:- The water will get absorbed.Garnish with grated coconut.:- Serve hot with tomato sauce or chutney.:- Can add a pinch of coriander powder and garam masala for taste.
