Badanekyi Palya Eggplant/Brinjal stir fry 1 no Eggplant (medium) (Brinjal/Vazhuthananga)1/2 cup Chopped onion (optional)2 tbsp Grated coconut1 tsp Any masala powder1 tsp Chilly powderSalt (As reqd)For seasoning: 2 tbsp OilAsafoetida (A pinch, Kayam)1/2 tsp Turmeric powderCurry leaves (A few)1 tsp Mustard seeds1 tsp Black gram (Uzhunnuparippu)2 nos Red /green chillies Cut eggplant into small pieces. Heat oil in a pan.Add all the ingredients for seasoning one by one. Add chopped onions and fry till translucent. Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.Fry till they are cooked.Add salt, chilly powder and masala powder and fry for a few minutes. Add freshly grated coconut and mix well. :- Serve with plain rice. Kerala
