Famous and much loved barbequed chicken

  • Chicken legs cut in to pieces : 3 nos
  • Water : 1 cup
  • Worcestershire sauce : 2 tsp
  • White wine vinegar : 2 tsp
  • Brown sugar : 1/3 cup
  • Red pepper flakes or red chilli powder : 1 tsp
  • Freshly ground black pepper powder : ½ tsp
  • Large tomato pureed : 1 tsp
  • Mustard : 1 tsp
  • Salt : as reqd
  • Freshly ground black pepper : few


  • Combine all the ingredients for the marinate in a saucepan and bring to a boil.

  • Allow the mixture to simmer for 5 - 8 minutes or till it thickens and becomes a sauce.
  • Remove from heat and allow it to cool completely.
  • Marinate the chicken pieces in the prepared barbeque sauce and keep aside for 3 - 4 hours.
  • Heat olive oil in a grill pan and cook the marinated chicken pieces on high heat till they turn golden brown on both sides.
  • Transfer to a baking tray to finish cooking the chicken (approximately 5 minutes on each side).
  • You can add a little water to the grill pan to remove the remaining marinate and pour it over the chicken pieces in the baking tray.
  • When the chicken is cooked all the water will dry up.
  • Serve with salad and garlic bread.
