Ingredients
- Bitter gourd(cut in thin circles) - 1/2 kg
- Green chillies - 4 nos
- Tomato(chopped) - 2 nos
- garlic(chopped) - 2 nos
- Ginger(chopped) - 1 piece
- Oil - 1 1/2 cup
- Chilly powder - 3 tbsp
- Cumin seeds(Jeerakam) - 1 tsp
- Onion(chopped) - 1 no
- Vinegar - 1 1/2 cup
- Fenugreek seeds(Uluva) - 1/4 tsp
- Mustard seeds - 1/2 tsp
- Salt(As reqd) -

Instructions
- For preparing bitter gourd pickle, first roast the bitter gourd and keep it aside.
- Heat oil and roast uluva and cumin seeds in it.
- When the oil drains, add the chilly powder and then add the vinegar and let it boil.
- Add the roasted bitter gourd and salt and mix it well.
- Take it from flame and let it cool.
- Convert it to a bottle and serve as a side dish with rice when required.
